Ingredients
- 2 boiled yolks
- 200g sour cream (at least 20% fat)
- 1 tablespoon Dijon mustard
- salt is to taste
Cooking
Mix the yolks with the sour cream, add the remaining ingredients. Whisk with a blender (about 30 seconds) for a more airy texture. Sour cream is sure to use fatty; it is thicker and better holds the salad’s shape. But Dijon mustard can be replaced with ordinary Russian mustard.
Yogurt sauce with cottage cheese
This sauce is suitable for different kinds of salads. Preparation time: 10 minutes.
Ingredients
- 200 ml low-fat yogurt without additives
- 200 g grained cottage cheese
- 2 boiled yolks
- 2 teaspoons Russian mustard
- 2 teaspoons lemon juice
- salt is to taste
Cooking
Combine all ingredients in a bowl and whisk thoroughly with a blender. You should get a fairly thick sauce in consistency and taste close to mayonnaise. Instead of yogurt, you can use kefir.
Bean sauce
Suitable for mixed salads and meat dishes. Preparation time: 10 minutes.
Ingredients
- 200g canned white beans
- 1 lemon
- 70 ml sunflower oil
- 1 teaspoon mustard
- salt and black pepper – to taste
Cooking
Drain the liquid from the beans and use a blender to turn the beans into a puree. Add the pulp of one lemon (half the juice is better to drain), sunflower oil, mustard, salt, and pepper. Mix everything thoroughly.
Sour sauce with horseradish
Suitable for dumplings and pork dishes. Preparation time: 2 minutes.

- 200g sour cream
- 2 tbsp horseradish
- 1/2 teaspoon garlic powder
- black ground pepper – to taste
Cooking

- 250 ml of milk
